Please post your Sausage & Peppers Recipe!
For a crowd of 30 or so. Not the main meal, buit would like to be able to make at least 1 or 2 trays.

I do it in the slow cooker and it's not the traditional sausage and peppers recipe. This will feed about 5-6 people, if you have a large crockpot just increase the ingredients
Slow Cooker Sausage with Sauce
Ingredients - 8 (4 ounce) links fresh italian sausage -1 (26 ounce) jar spaghetti sauce -2 red peppers, seeded and sliced into strips -1 onion, sliced
Directions - Poke a fork hole in the italian sausage links and boil for 20 minutes
-Place the Italian sausage links, spaghetti sauce, red pepper and onion into a slow cooker. Stir to coat everything in sauce. Cover, and cook on Low for 6 hours. Serve on hoagie rolls, or over rice.

i use red and orange peppers, and onion
first i boil the sausage, poke a fork through each link
when its done boiling, i dump out the water, and put olive oil in the pan, and get it really hot
in a larger pan, i pour some olive oil and get it somewhat hot, and then i add the strips of peppers and onions, and i also shake on some garlic powder and a little bit of my Peppercorn Medley :)
then i throw the sausage into the pan, whole... sear it- nice and brown on all sides. then, i take the sausage out of the pan, slice it diagonally and then throw it back into the pan, sear both sides of the sausage. when its all uniform in color, i dump the sausage pieces into the peppers pan and let them sit there for a little while
when i dont make them to stick them in hot dog buns, i i make rice with it- 1 cup rice, 2 and a half cups water, 1 chicken boullion cube and 1 pat of butter, in the oven... igood luck

What I do is put a little biit of evoo in a frying pan, and put the sausage in it-the full links. I let it brown on eaech side, but not cook totally through. Meanwhile, i slice up the onions & peppers & throw them in a pan....I take out the sausage & slice it..it is still pink in the middle...I put it in the onion/pepper mixture, mix it around, add salt, pepper, onion powder, minced garlic, and drizzle some evoo...I mix it all around and cover it with tinfoil. I put it in about 375 for 1 hour and 15-25 minutes, until the peppers & onions are nice and soft. (the sausage cooks in the oven too, thats why I only brown it in a frying pan, because I do not want it to totally try out)
You cna add tomato sauce too if you want, but I do not care for it.

I have to thank you for posting this. I saw it posted awhile back , and my goodness, it was to die for. Thank you! It is the only way I make sausage and peppers now!

I actually bbq the sasuage links first,& I use the pinwheel sausage . For the amount of ppl your saying I would use 3 pinwheels or 3 packages of sausage ( 4 in each pack figure )
I use reg , green yellow & orange peppers,
3 of each for your amount of people
I fry up one large onion ( 2 yours) first , with a few cloves of thinly sliced garlic. I then add the sliced peppers to that. Once the sausage is done I slice it & I add that all to the pan . Shut off the stove top & then let the sauage simmer in the onions & peppers
hth..
if you have left overs you can always make a stuffed saussage bread, omg so good

I roast the sausage in the oven - put them all in a big roasting pan with water that comes a little less than halfway up the sausage. Let it cook - roll them to get them brown all over.
In a BIG stock pot I put some EVOO, crushed garlic, and about 3 large Vidalia onions and 1 small yellow onion. When the onions JUST start to get soft, I take them out, reserve them and add a boat load of Cubanelle peppers (Italian frying peppers) sliced lengthwise into big strips. As the peppers get soft and more room is created in the pot I add 1 sliced red bell, 1/2 sliced yellow bell and 1/2 sliced orange bell. I also toss in a chopped up habenero and a long hot pepper. I add back in the onion and stir it all up.
When the peppers are cooked, I let them cool. After they are cool I slice them and add the pepper mixture RIGHT to the same roasting pan so it picks up the extra fat/water from the sausages. I stir it all up and add salt and pepper to taste. It's YUMMMMMMMMMM!

This sounds on the money- this is very similar to what my mom said to do. Do you think about 20 peppers is enough?

I just saw this after posting a new thread asking for a recipe.
I never use jarred sauce, but in a crock pot, with the flavors of the fresh peppers and sausage, it should be ok. What kind/brand of sauce do you use?
