Please share with me your best summer recipes for company (not BBQ)!
I'm having DH's family over Fri for dinner, and I want to make a summery, festive meal. We don't have a BBQ or outdoor space, so I want to cook it all inside.
Need apps, main dish, and sides.

Corn salad. I don't use exact measurements, but here are the ingredients:
Canned corn diced orange pepper diced red pepper diced red onion grape tomatoes - halved chopped fresh basil olive oil white vinegar red wine vinegar
(If I use 3 cans of corn, I would use approximately 1/4 cup olive oil, 2 tbs white vinegar, and 1 tbs red wine vinegar)

My mom made this and everyone loved it. To save money, she used crab, and even tried it with the fake stuff (surimi) once and it was delicious!

the rice ball casserole was a hit with company. or simple recipes from the crock pot. meat sauce, pulled pork, pot roast

I'm in love with this summer tomato sauce! It doesn't get cooked, so you're only heating up the kitchen to make the pasta.

I'm a big fan of the crockpot. Make pulled chicken and serve it on rolls with some deli salads! That's easy and yummy.
Here's the recipe I use:
One package of chicken cutlets One vidalia onion, sliced One bottle of your favorite BBQ sauce
Put onions in the bottom of the crock pot, chicken on top, and pour the BBQ sauce over (my SIL puts in half a can of root beer, so that's an option for a little extra kick). If you don't add the root beer, fill the emprty BBQ sauce bottle 1/4 of the way with water, swish it around, and pour that in the crock pot as well.
Cook on low for about 6 hours, then shred chicken with a fork, and cook for another half an hour.
Enjoy!!

i just did a party at my house bruschetta (it was ALL gone in minutes) insalata caprese cesar salad cheese & crackers chips & salsa sicilian rice ball casserole i cant remember if there was somethign else...

this has been a hugeeeeeeeeee hit this month at our house!! i seem to be making it every weekend
Grilled Zucchini and Bean Salad Recipe courtesy Marcela Valladolid
Prep Time:20 min Cook Time:8 min Level: Easy Serves:4 to 6 servings.
Ingredients 2 tablespoons fresh lime juice, from about 1 lime 2 tablespoons red wine vinegar 1/4 cup olive oil, plus more for brushing Salt and freshly ground black pepper 1/2 cup finely chopped red onion 1/4 cup chopped fresh cilantro (i used a little more than a cup) 2 serrano chiles, stemmed, seeded and finely chopped 2 cloves garlic, minced ( i used 4) 1 (15-ounce) can white kidney beans, rinsed and drained 1 (15-ounce) can red kidney beans, rinsed and drained 3 zucchini, cut lengthwise into 1/2-inch thick slices
Directions Prepare a barbecue or grill pan to medium-high.
In a medium glass bowl, whisk the lime juice, vinegar and oil until slightly thickened. Season with salt and pepper. Add the red onions, cilantro, serrano chiles and garlic and toss gently until the vegetables are coated. Add the beans and stir to combine. Season with salt and pepper.
Brush the zucchinis on both sides with olive oil. Sprinkle with salt and pepper. Grill the zucchini on a lightly oiled grill rack until tender, turning over once, about 4 minutes per side. Cut the zucchini crosswise into 1-inch pieces. Add the zucchini to the bowl with the dressing and beans. Toss to combine and serve.
