I am good with appetizer type stuff:
I have a few staples that go over really well:
Blue Cheese Bacon Dip:
2 bricks cream cheese Small container of Sour Cream Small container of crumbled blue cheese crumbled bacon (about 1 cup) - I buy the Hormel "real bacon" bits - it's just easier.
Let the cream cheese soften, I use my Kitchenaid mixer to combine all of the ingrdients. - Put in an oven safe dish and bake at 350 for about 25 minutes.
Mango Salsa:
1 Mango - cut into small chunks 4 small tomatoes - chopped 1 avocado - cut into small chunks 1 jalepeno - chopped 1/4 C chopped red onion chopped cilantro 2 -3 cloves of garilc chopped salt/pepper small amount of olive oil
Combine all ingredients, mix and refrigerate at least 1 hour before serving w/ tortilla chips - I like to make it the night before
Bruschetta:
6 tomatoes - seeds removed and chopped 1/2 c finely chopped red onion 3-4 cloves of finely chopped garlic LOTS of fresh basil - chopped up salt/pepper small amount of olive oil -
Mix all and again, refrigerate at least an hour, overnight is best.
I serve this on french bread slices (I toast in the over drizzled w/ olive oil and grated cheese)
Chili Dip:
1 brick cream cheese 1 can Hormel Chili (you can use the vegetarian one too) package of shredded cheddar
layer a baking dish with cream cheese, chili and top w/ cheddar - bake at 350 until cheese is melted (usually about 45 min) - or, it's easier to just put it in the microwave for a few minutes - (4ish?)

Spniach Artichoke Dip -
1 thing of frozen chopped spinach, drained 1 can of artichoke heart (NOT the marinated ones) chopped 1 Cup of Mayo 1 Brick of Cream Cheese 1/2 cup grated cheese 1 chopped garlic clove (you can use garlic powder, but ONLY a little !!) chopped fresh basil 1 C shredded mozz
Mix all, leaving behind 1/2 c mozz, put in baking dish, sprinkle additional mozz on top and bake at 350 for 30 min ....

I also cut up pilibury crescent rolls and make mini 'puffs' filled with anything and everything - bacon and cheese, cream cheese and salami, ground beef sauteed with onion,garlic and 'whatever' .........brie and cranberries, .........everything works !!

I do this, I make mini calzones with ricotta and chopped up bits of pepperoni, I never really considered doing it with other stuff, hmmmm....good idea! great thread!

I usually don't make this in the summer, b/c I don't like having the oven on if it's too hot..but for my parties in the colder months:
1. Sweet & Spicy Chicken wrapped in bacon ( a Paula Deen recipe)
3-4 chicken cutlets bacon mix 3/4 c of brown sugar with 1/4 cup of chili powder
a. cut chicken cutlets in chunks. wrap a 1/2 slice of bacon around it and secure with a toothpick. b. roll in the brown sugard/chili powder mixture and put on a baking sheet (I usually line it with tin foil to avoid cleaning the mess or use a broiler pan) 3. Bake in oven for 30 minutes at 350
They are yummy. Especially with some dijon or spicy mustard on the side to dip in. People go crazy at my parties for these.
Also:
Aunt Barbara's Bourbon Hot Dogs
1 package of hot dogs (if you use the full dog, cut into bit size pieces) or you can get the cocktail weiners already small 1 cup bourbon 1 and 1/2 cups ketchup 1 and 1/2 cups brown sugar 3 to 4 tsp of minced fresh onion
Bring above to a soft boil Add hot dogs. Lower heat and simmer for about 2 hours

"Dirt" Everyone loves this when I make it:
1 tub thawed cool whip 1 package of instant chocolate pudding prepared 1 package of oreos Gummy worms
Crush the oreos in a food processor until they look literally like dirt. In a bowl mix together the cool whip, the pudding and about 2/3 of the crushed cookies. Add the gummy worms and mix in. I buy a new beach pail and shovel when I make this sometimes and wash it really good, put the whole mixture in there and then you cover the top with teh remaining oreos and use the shovel to serve it. I usually refrigerate it for about an hour to two hours first. It's so delicious and people eat it up right away!

Ummmm - what DO I serve that dip with? My sister's BF eats it w/ potato chips, my DH likes it w/ crackers, my cousin likes it w/ tostitos .......
I just put everything out on the table and it's every man for himself !!

this is always a big hit but it's usually done during the fall/winter months. You can serve it with graham crackers or some apple wedges.
Pumpkin pie dip
1 (16 ounce) container frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (15 ounce) can solid pack pumpkin
1 teaspoon pumpkin pie spice
DIRECTIONS
In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until serving.

Seven Layer Taco Dip
INGREDIENTS 1 (1 ounce) package taco seasoning mix 1 (16 ounce) can refried beans 1 (8 ounce) package cream cheese, softened 1 (16 ounce) container sour cream 1 (16 ounce) jar salsa 1 large tomato, chopped 1 green bell pepper, chopped 1 bunch chopped green onions 1 small head iceberg lettuce, shredded 1 (6 ounce) can sliced black olives, drained 2 cups shredded Cheddar cheese
DIRECTIONS In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans. Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.
