poaching chicken?
i've never poached anything before. how do you poach chicken? I'm googling it now seeing many variations.
any tips?

I use poached chix in other dishes, not to serve on its own.
I just cut the chix in bite sized pieces. Boil some water in a skillet. Season w/ salt, garlic salt/powder, onion powder, soy, hot sauce, paprika, cumin, italian seasoning/basil....or whatever else i grab from the spice rack.
Then I use it in other recipes. Not a fan of pan fried chicken - I think this way is more moist.

I used poached chicken in enchiladas...I put whole chicken breasts in seasoned boiling water (same seasonings as PP above). Make sure they are completely covered and take them out in about 13-14 minutes, cut open to check they're done, then shred them with forks. They should be juicy!
