i usually take thick porchops and make a pocket in them i mix together chopped spinach, garlic, salt, pepper, procutto di parma (chopped up) , fontina cheese (grated) , a little bread crumbs and olive oil and mix that altogether and stuff the pork chops then I egg and bread them and bake coated in a little olive oil till they are done about 45 min on 375

Parmesan-Crusted Pork Chops
2 large eggs 1 cup dried Italian-style bread crumbs 3/4 cups freshly grated Parmesan 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces) Salt and freshly ground black pepper 6 tablespoons olive oil Lemon wedges, for serving
Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere. Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.
Pork Chops alla Pizzaiola
2 tablespoons olive oil 2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each) Salt and freshly ground black pepper 1 small onion, thinly sliced 1 (15-ounce) can diced tomatoes, in juice 1 teaspoon herbes de Provence 1/4 teaspoon dried red pepper flakes, or more to taste 1 tablespoon chopped fresh Italian parsley leaves
Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm. Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

I take the center cut boneless ones, and sprinkle with garlic powder, onion powder, a little salt, and black pepper, brown on both sides till almost all done, throw in a can of cream of whatever soup you like with about 1/2 can water and simmer, until cooked thru. YUM.

rachael ray's are good:
1/2 cup dark amber maple syrup (aunt jemima works for me) 4 tablespoons spicy brown mustard (1/4 cup) 1/4 cup apple cider 1/4 medium onion, finely chopped 1/2 teaspoon allspice (eyeball it) 1 teaspoon ground cumin (1/3 palmful) 8 center-cut boneless pork loin chops, 1-inch thick Extra virgin olive oil (EVOO), for drizzling Grill seasoning blend, such as McCormick brand Montreal Steak Seasoning or salt and pepper
Pre-heat grill pan or nonstick pan over medium-high heat or pre-heat indoor tabletop grill to high.
Pre-heat oven to 350°F.
Combine maple syrup, mustard, cider, onion, allspice and cumin in a small saucepan and cook together over moderate heat for five minutes until sauce begins to thicken a bit.
Coat chops lightly in EVOO and season with salt and pepper. Cook chops on hot grill pan or tabletop grill for three minutes on each side. Baste chops liberally with sauce, then cook 2-3 minutes more.
Transfer chops to a baking sheet. Baste again with sauce and transfer to a hot oven to finish cooking them. Bake 10-12 minutes, until your apples are ready to come off the grill pan (see next step).

Get the Lawry's jerk marinade so, so good and easy.
Also do them southern style: flour - egg - flour and fry in oil. Use pan dripping to make roux with flour, add milk to make gravy.
