Pork chops in the fridge with sell by date from yesterday, the 15th
Should I chuck them or will they be ok if I cook them today?

smell them... when you open the package you will be able to smell if they are bad right away. if they don't smell, I would use them.

I would do the same. The date is usually a "sell by" date, not necessarily expiration.
(I usually rinse first too, but I know not everyone does.. I don't like that slimy meat juice they sit in.)

I'd say you could probably cook them today. But I always go by the smell. If it is very different than usual- throw it out! But one day from the package date is most likely fine.
