potato eyes (need quick advice please :-)
I have red potatoes that I wanted to use to make smashed potatoes but each potato has about 5 spuds growing out of them. Can I still use these so long as I cut these things out? Or does this mean I kept them for too long and they need to be tossed out?

I usually cut them out...if they arent too big. Im sure some will say to toss them but I just cut out the bad parts and use the rest.

I cut them out and the rest of the potato looks fine...except a super thin light light green color under the skin...almost unnoticable. I am making these potatoes for a friend....don't want to give her bad food. (but I really don't have anything else to make for a side dish)

I cut out the eyes and make them anyway. I don't use potatoes if the skin is too wrinkley, the potato is soft or they smell rancid. But eyes growing? No problem for me!
