Potluck Recipe Ideas Needed Please!
DH and I are invited to a Thanksgiving themed potluck this week. All of the mainstream dishes have already been "claimed" and I have no idea what to make! Here's a list of what's being made by others. I can bring anything: a side, dessert, whatever. I just can't think of anything. I'm clueless!
Turkey Stuffing Cornbread Sweet Potato Mash Cranberry Sauce/Compote Lasagna/eggplant parm Stuffed Mushrooms Pumpkin Bread
Any ideas are welcome. Thanks!!

I would bring a Jack Daniels Chocolate Pecan Pie
Dessert would probably be the way I'd go.
However, if you have a crockpot, you could bring a soup (butternut squash, pumpkin, etc.).
Or how about a nice big bowl of string beans in olive oil and garlic?

I agree that dessert would be good. I liked the pecan pie suggestion. Also, you could do an apple pie or crumble, or pumpkin cheesecake.
If you want to bring a side, what about plain mashed potatoes? A salad using fall flavors? Or I have a carrot soufflé recipe that is a great make ahead dish (you can just reheat in the microwave even when ready to serve). It is something unique and everyone I know loves it, even those who don't like carrots. It goes really well with roasted turkey, I make it every thanksgiving! Let me know if you want the recipe.
Maybe an appetizer or hors d'ourve? There is a new thread on this board with a lot of ideas.
Or how about a fun drink or cocktail, such as hot apple cider with rum served out of a crockpot, or winter spiced sangria? I also saw a recipe for caramel apple cocktails made with sparkling wine online...it looked really festive.

Thanks so much for the suggestions! I was leaning towards dessert too...but I'm not much of a baker.
That Jack Daniels Pecan Pie sounds DIVINE!! I'll have to do a search for a recipe. Christine, I'd love the carrot soufflé recipe! That sounds so unique and delish!

Here's the recipe - it's not a "light" dish, that's for sure, but it's so good and relatively easy to make in a food processor or mixer (I use my food processor... my 10 cup bowl is filled to the top when I make this).
Carrot Souffle
Serves 6-8
1 - 2 lb bag of baby carrots 1 cup of butter, melted 6 large eggs 1 cup granulated sugar 6 tablespoons all purpose flour 2 teaspoons baking powder 2 teaspoons vanilla
1. Preheat oven to 350 degrees.
2. Boil carrots until soft, drain.
3. Blend carrots with melted butter until smooth. [I use the food processor]
4. Add remaining ingredients and mix well. [Again, you can do it all in the food processor.]
5. Add to greased deep baking dish [I use a souffle dish or a round Corningware dish] and bake for 45 minutes or until knife inserted in the center comes out clean. [If it starts to brown too much too quickily, lower heat to 325 degrees.]
You can make this a day or two in advance, and store it in the fridge. Reheat in the oven or the microwave. It's great with grilled or roasted meats, including turkey!

Being that most of the dinner items are taken I'd probably do a dessert. My favorite is pumpkin pie!
Or how about doing a fun, festive drink?
