I am not surprised at all. The Taliban still operates and treats women very similar or worse. Or the kidnapped women by ISIS.

Thats why it is so scary to watch. It is too real at this point!
As I watched the whole season I couldn't help but to think of our new "Trump America" and how easily little by little people can have their rights stripped away seemingly before their eyes.
They made mention in the show of how they overthrew Congress and here we are with a president who is so dismissive of the democratic process and who has little respect for adhering to the Constitution.
Honestly, it made me a little uneasy as I watched in light of the current political climate with so much of the country divided and a president who leads with fear, lies, and division. Scary. Scary that things like this can happen in the world, it might be fiction but crazy $hit like this happens all around the world in some capacity.

I shouldve rephrased that, is he an eye that is pretending all along and will turn on Offred or is he genuinely an eye, but a good guy.
I thought the book ended open ended the same way season 1 ended?

No, the book doesn't end there. There is another chapter in the book. It isn't specific to her but it gives the illusion of what may have happened to her.
