pumpkin question
how do you "cook down" the pumpkin to make puree to cook with???

I've made pie with fresh pumpkin and also soup. You should cut open into wedges brush with butter or oil and bake in the oven until browned and soft. Then scoop out the flesh and you can do whatever you want with it.
