question for those who make rainbow cookies...

Any tricks when working with the almond paste in the tube?
When we tried making these last year it was very difficult to soften the almond paste and so it then seemed very lubmpy. Any suggestions.
I read somewhere to use a cheese grater to break it up, or a food processor?

i dont use almond paste i buy the almond extract , much much easier & tastes the same

We put almond paste and almond extract as well.
Not sure where we got the almond paste, my SIL picked it up.

I use the extract as well and they taste just as good!

I don't use almond paste in a tub. I use the can version. Not sure if there is a difference. But before mixing with mixer I break it up with a fork.

I use the can one. I break it up with a fork or my hands and I use almond extract also with the paste

To answer your question, I make my own almond paste, b/c they don't sell almond paste here. If you want the recipe, FM me. It is much cheaper than buying it in the store and it is soft.
