question for those who make rainbow cookies...
Any tricks when working with the almond paste in the tube? When we tried making these last year it was very difficult to soften the almond paste and so it then seemed very lubmpy. Any suggestions. I read somewhere to use a cheese grater to break it up, or a food processor?

We put almond paste and almond extract as well. Not sure where we got the almond paste, my SIL picked it up.

I don't use almond paste in a tub. I use the can version. Not sure if there is a difference. But before mixing with mixer I break it up with a fork.

To answer your question, I make my own almond paste, b/c they don't sell almond paste here. If you want the recipe, FM me. It is much cheaper than buying it in the store and it is soft.

I also use the almond paste in the can but have had it with the almond extract and it was just as good! YUM!!
