Rainbow Cookies
4 eggs 1 cup flour 1 cup sugar 1 teaspoon almond extract 1 cup melted butter food color
FOR TOPPING 6 oz chocolate chips 1 tablespoon oil
FILLING Jam - apricot, strawberry and raspberry are all very good but you can experiment (I bought black cherry conserve with amaretto the other day, it's go-od!)
Beat eggs until fluffy. Add sugar, then flour, melted butter and extract. Mix well. Divide into 3 bowls. Add green food color to one, red to another and leave the third plain. Turn into pans and bake at 350 for 10 minutes or until light brown.
Let cool. Put first layer on wax paper and spread with jam, then put plain layer on top of that and spread with jam. Lastly put red layer on (I like to trim edges at this point so it's all even)
Melt chocolate chips and oil. Spread chocolate on top of cake and refrigerate or freeze until chocolate is hard. Flip and spread chocolate on other side and refrigerate/freeze. When both sides are hard, cut into small pieces. (Hint: I cut width-wise strips and then turn strip onto its side to cut into smaller pieces, this way you're cutting through the cookie more than the chocolate - the chocolate has a tendency to crack.) I had a recipe once and it had almond paste in it I think. The real ones are made with that too!

IMO, no. Bakeries usually use almond paste, so almond extract is needed.

When I make them I use 2 tubes of almond paste, plus almond extract and amaretto. It's what gives them all the flavor.

Here's my recipe:
Ingredients: 12 oz almond paste (most are sold in 7oz tubes so I just use all 14oz and usually use a cheese grated to shred it up) 3 sticks of butter 1 cup of sugar 2 cups of flour 2 shots of Amaretto 1 teaspoon of almond extract 4 eggs (seperated) 12 oz of raspberty jelly 2 tablespoons of corn oil big bag of chocolate chips food coloring
Directions: Grease and flour three 9x13 inch cookie trays (I usually buy the disposable pans- I think 1/4 sheet cake). Beat almond paste, egg yolks, sugar and butter. Add flour, 1 shot of amaretto and almond extract. Beat egg whites until firm, fold into batter. Divide batter into three equal parts and add one color of food coloring to each, to your liking. Spread into cookie sheets and bake at 325F for 10-15 minutes (you can usually tell they are done when the top is not shiny). Let cool. Make mixture of Amaretto and water. Brush onto bottom layer of cookies. Spread jelly over the top. Put next layer on and repeat. On the top layer, do not apply the jelly, just the water/amaretto mixture. Wrap in aluminum foil, add weight and refridgerate 3-4 hours. Melt a package of chocolate chips with the corn oil. Spread over tops and sides of cookies. Cut into slices.

It will change the whole taste if you use vanilla extract. Almond is what the bakeries use and suprising it really is what makes them what they are -tastewise.
