questions re: potatos
I believe I have done this is the past but I just told my friend to do it and I don't want to mess her potatoes up so I figured I would see what you guys think. If you have to make homemade mash potatoes for tom. can you peel them tonight and place them in water in the refrig. so then in the morning they are already peeled and ready to be heated?

I think potatos taste funny that have been soaked all night. The water takes out something from the potatoes. I would just do other things tonight but do the potatoes in the morning

I just did this for our 'office feast'. I peeled and cut up my potatoes and rutabagas on Monday night - soaked them in the salt water and chicken broth that I used to boil them on Tuesday morning... and they were fine. Maybe my palate isn't all that sensitive though..

I would boil them with the skins on and then peel. water is the enemy of fluffy mashed potatoes... potatoes absorb a lot
