Quick and easy vegetarian recipes?
I'm trying to eat less meat and am having a hard time coming up with ideas on what to make for dinner that doesn't include it. It can't be too time consuming either bc I'm a FTWM.
Any ideas or suggestions? TIA

Quick and easy vegetarian recipes?
I just had this yesterday:
Portabello mushroom cap marinated in soy sauce, steak seasoning, pepper
Cut big slices of red onion put on a little EVOO and sea salt Put both on grill and cook for 5-8 minutes each side
Place the onion on top of mushroom, add slices of roasted red pepper on top of that and cover with swiss cheese to melt.
It was sooo delicious!

Falafal over salad with hummus
Marinated portabellos and red pepper rings (olive oil + balsamic)...grill for a few minuites on each side, throw some mozzarella on it and let it melt. Top with pesto.
Foil packets of veggies - I described it in this thread as sides.
Tortellini salad - get tortellini from TJ's, toss it wtih some olive oil and assorted vegetables and cheese. So good!
"Fancy" grilled cheese. Think outside the box...interesting breads, different types of cheese, load them up with arugula, pesto, tomato, sauteed mushrooms, etc..
Baked potatoes with vegetarian chili.
Homemade steak fries topped with veg chili and cheese.
Tacos - use beans instead of meat. Quesedillas - same.
Breakfast for dinner! Eggs, pancakes, soy sausage.
Stirfries...chop up all sorts of vegetables, cube some tofu.
Interesting salads. Lately I'm hooked on baby greens, strawberries, blueberries, and mandarin oranges...toss some toasted pecans on there...I like Annie's papaya poppyseed dressing on that.
Pasta with garlic, broccoli and olive oil is easy.
Homemade pizza. If it's a pain to deal with the dough, you can make pizzas on pitas or English muffins.

I really love grilled marinated portabella mushrooms topped with quinoa, feta, arugula, and cherry tomatoes.
Also love pasta with pesto, mozzarella, and tomatoes.
Risotto with smoked tomatoes and mascarpone.

I saw a black bean burger recipe on SkinnyTaste that I have been wanting to try... you make them and freeze them, and then can throw them directly on the grill (or I guess into a pan or a broiler). So maybe you can make some veggie burgers/patties in advance and freeze them?
I also made the SkinnyTaste Mediterranean Quinoa salad and thought it was good. It stayed well in the fridge for days.
And I made a SkinnyTaste Black Bean, Corn, and Avocado salad that was also really good in a whole wheat wrap, as a sandwich.
Maybe along those lines, cheese or veggie quesadillas?
A big pasta salad you can make in advance with cheese, veggies, etc. and eat when you get home from work? I make a really good caprese pasta salad with tomatoes, basil, and mozzarella.
Homemade or even frozen pizza and a side salad.
I often make frittatas or quiches with lots of veggies and cheese, and then freeze individual pieces to heat up and eat for breakfast, lunch, or dinner (with a salad).
Baked potato or sweet potato with toppings.
Some kind of veggie stuffed with a meatless filling... I've done tomato halves with herbed ricotta cheese, tomato halves stuffed with orzo and allouette cheese, peppers or zucchini or eggplants stuffed with brown rice and chopped veggies.

Peppers or tomatoes stuffed with black rice, brown rice or quinoa and sprinkled with cheese. Homemade veggie burgers on sprouted grain buns with desired condiments ( can share recipes, if needed). Tofu or tempeh stirfy with veggies Spaghetti squash with marinara sauce , nutritional yeast , cheese with side veggies. Spaghetti squash primavera Breakfast for dinner : eggs , healthy pancakes ( have tons of recipes ). A big salad with roasted beans, nuts, seeds , avocado Hummus and falafel with more veggies. Roasted polenta with marinara sauce and cheese with roasted veggies on the side Quinoa, chickpeA and spinach salad Raw zucchini noodles in a red pepper sauce Sorry for how it all runs together , posting from an iPad
