Quinoa salad instead of pasta salad?

My sister just recently learned of her gluten intolerance..after years of suffering and no help from Drs (but that's another story!)

Anyway, We're having a block party and I want to make things she can eat...She loves Quinoa- as do I- and I want to make a Quinoa salad like a pasta salad. what would you add? What kind of dressing? Or does anyone have a recipe? We love to experiment and made our dressings...so I'm open for ideas..

They make a quinoa pasta. Stop & Shop, Whole Foods and I think Trader Joe's should carry it. Its a blue/green box.

I make a quinoa salad the same way that I do tabouleh. Rinse well, cook in salted water and toss with chopped tomatoes, mint, salt, pepper, parsley, lemon, olive oil and some lettuce for decoration!

I love to make greek quinoa salad -

I cook the quinoa, then toss it with cherry tomatoes, red onion, cucumber, kalamata olives & feta cheese.

I just use olive oil, lemon and oregano to dress.

DH makes Quinoa Salad for dinner every once in awhile and it's delicious! He makes with quinoa, canellini beans, and baby spinach, and a lemon vinaigrette (juice of 1 lemon, olive oil, a little dijon mustard, salt and pepper).
