My Rainbow Cookie Recipe

Rainbow Cookies

Ingredients:
12 oz of almond paste, grated (I usually use 14oz cuz the tubes come in 7oz each)
3 sticks of butter
1 cup of sugar
2 cups of flour
2 shots of amaretto
1 teaspoon of almond extract
4 eggs (separated)
12 oz jar of raspberry jelly or apricot jelly
2 tablespoons of corn oil
big bag of chocolate chips
red, green and yellow food coloring

Directions:
Grease and flour three 9x13 inch cookie trays (I buy the disposable 1/4 sheet pans). Beat almond paste, egg yolks, sugar and butter. Add flour, 1 shot of amaretto and almond extract. Beat egg whites until firm, fold into batter. Divide batter into three equal parts and add yellow, red and green food coloring (one color to each, to your taste). Spread into cookie sheets, and bake at 325F for 10-15 minutes (or until they don't look shiny). Let cool. Put green layer onto a cutting board or cookie sheet. Make mixture of water and second shot of amaretto. Brush onto the green layer. Spread jelly on green layer. Put yellow layer on top of green layer and repeat with water/ameretto mixture and jelly. Place the red layer on top, using only the water and amaretto mixture. Wrap in aluminum foil, add weight (such as phone book) and refrigerate 3-4 hours. Melt one package of semi-sweet chocolate chips with two tablespoons of corn oil. Spread mixture over cookies, top and sides. Refrigerate, the cut cookies into slices.
