Mine is similar to the ones on that thread, but I start with risotto, so it's stickier (Igot that from Giada Delaruentiis) & I don't add meat or peas ( because my grandma didn't.)
I tried it once with Mozzerelal, but it didn't melt, and just made it very heavy.
I use enougth oil to cover them, so all sides cook at once & they brown evenly, and stay round. I also use a candy/fying thermometer to make sure the oil temperature stays even.

sorry...we dont make them with meat...just cheese.
I have had them with meat and its just like a teaspoon of meat mixture in the middle of a baseball sized riceball.....so I would say more rice than meat...like 4 to 1 ratio

I make theses alot . I make approx 4 cups of cooked rice. figure a cup of rice per rice ball.
ok so this is what i do I cook the rice, then mix in like a cup of shredded cheese to the rice . Figure 4 cups rice cup cheese. Mix that up & let it cool down..
then I make a cup of chop meat. a cup of sauce & a cup of pea's & cup of diced mozzarella
After the rice has cooled down roll it into the size a lil smaller than a tennis ball, then make a thumb dent in the middle & add a lil bit of the meat, sauce pea's & mozzarella. Then take some more rice 1/2 the size of a tennis ball & stack it on top of the mixture u just added. Roll it all into a ball. Egg it then bread it, then put them in the freezer for about a 1/2 hour & then repeat the egg & bread again & frezze for a 1/2 hour .
Take a small pot & fill with oil . the rice ball will have to be completly immersed in the oil , so whatever size pot u use thats how much oiil u will need.
Fry them up one by one,
Mine come out the sixe of soft balls... Its alot fo work ,but i found them to work best this way & oh so tasty,,

I don't think so, how do you make them?
I want to make something I never have for DH. Make it special this year (Last Christmas before baby arrives!)
I was going to make fried calamari for the first time too (DH favorite)

u take a pound oc capellini, cook it al dente, once its done u drain it & then lay it in a say 9x 13 casserole dish. Then make a quick alfredo sauce, ( milk flour, chesse butter s&p ) mix that into the capellini. Put the dish in the fridge & let it get cold. After its cold you cut patties out of them egg bread & fry them ,, To die for ,

Quick hint...my old italian aunt used to buy rice from a chinese restaurant. She said the sticky-ness of the rice made it a lot easier to make them.

I use the boil in a bag succes white rice
boil it until cooked - the put in a bowl and mix:
a little ricotta -- maybe a spoonful 8 oz of mozzarella - shredded diced prosciutto (maybe about 4 slices , sliced medium-thin thickness)
crack an egg in a sep bowl and pour half in the mixture to get it sticky
shape mixture into balls (about golfball size), coat with breadcrumbs and bake for about 15-20 mins on 350
(you can also add peas if you want)
It is my mom's recipe they are gooood!
