Ricotta cheese
Last night for Christmas dinner my DH made Lasagna (it was very good btw ). During dinner I went to go look at the ricotta cheese container - it was Shop Rite brand and did not say pasteurized any where on it...I got nervous. My DH said even if it wasn't, the lasagna was cooked in the oven at 350 for a long time. This morning I called Shop Rite customer service and the rep said that "it is made according to the law - above a certain temperature, etc however they cannot write pasteurized on the container bc it is not done in a special sort of pasteurizing machine". Ok...
So do you think it was ok? If it was made above whatever the regulated temperature was and then baked in the oven at 350 degrees?
I am thinking yes but what you guys think?

Usually with Pollo, Sorrento it doesnt say pasturized, but it the first ingredient say Pasturized milk. Does it say that? I am pretty sure you are fine though. I always eat Ricotta bc I had researched it when I first became preggo and it was fine (the packaged ones in the stores). I even went on the Sorrento website and was going to email them...lol!!!

I think it's perfectly fine!!!! Besides, even if it was not necessarily "great" for you, I think everything in moderation is the key anyways!

Ricotta cheese is made by adding in acid to milk and heating it....
Even if it was made with Raw milk it would still be safe b/c of the temperature required to make it Ricotta cheese...
So while it may not be considered truly pasteurized ALL ricotta cheeses are safe b/c of the methods used to make it...
Does that make sense?

Also the fact that it was cooked in Lasagna makes it fine! The concern with unpasteurized cheeses is when you eat them raw.
