Risotto question
Has anyone ever frozed leftover risotto? I want to make a batch of mushroom risotto for DH and freeze small containers so he can bring to work but I'm not sure how it would taste once defrosted

I think it depends on the risotto recipe
Now that you mention it, I've never frozen risotto, despite making it fairly frequently. My guess is that as long as it is a classic recipe (risotto, white wine, broth, butter/oil, some veggie, and a smidge of cheese) it should be fine... especially since there are tons of frozen dinner entrees that have rice, and the rice doesn't taste wierd

I would worry about the cheese, did you use parmesean? I would definitely give it a try. If it isnt good...you bin it!
