Roasted Chicken
Ok I have wanted to make this for a while and I even bought a roasting rack and pan and they are still in their packaging.
Any tips/recipes?

No advice, you have the tools.... here is a great recipe thread I notebooked. My basic recipe is in there and a few others I tried from ladies here.

Actually, I do have advice... Unless you buy the ones with the pop up thingy, you should invest in a thermometer to stab your meat with. Sometimes the pop up doesn't work exactly right.
I also have a recipe for Chicken a la King for left over chicken pieces if you would like.

Not to brag, but I make the best roasted chicken.
Here's what you do . . .
Stuff the bird w/ sliced lemons and a few whole garlic cloves. Pat the bird dry Drizzle olive oil over the entire bird Liberally season w/ kosher salt and fresh cracked pepper
Roast at 400 for about 3.5 hours

this sounds about right, I like rosemary in there too! I'd get an in-oven thermometer too, the pop up things sometimes dont work. I got an al clad one and its fabulous, I use it for all my meats even on the stovetop, like for meat in a frying pan so I dont have to cut into the meat anymore! Best thing I ever bought :)
