Roasted Potatoes
Anyone have a really good roasted potatoes recipe that doesnt use a ton of EVOO.... Thanks, Scott

I use EVOO in mine but I only use 3 tablespoons in mine.

Cut up 4 - 6 big potatoes Mix a package of onion soup mix, 3 tablespoons of EVOO with the pototoes Bake in the oven for 30 minutes at 400 degrees

I make these all the time.
Packet Potatoes
1 sheet (18x24-inches) Reynolds Wrap® Release® Non-Stick Foil 1 small onion, thinly sliced 4 medium red potatoes, cut in bite–size pieces 2 tablespoons olive oil or vegetable oil 1 teaspoon seasoned salt 1/2 teaspoon dried dill weed (optional) 1/4 teaspoon pepper
PREHEAT oven to 450°F OR grill to medium-high.
CENTER onion on sheet of Reynolds Wrap Release Non-Stick Foil with non-stick (dull) side toward food. Layer potatoes evenly on top of onion. Drizzle with oil. Sprinkle with seasonings.
BRING up foil sides. Double fold top and ends to seal making one large foil packet, leaving room for heat circulation inside.
BAKE 30 to 35 minutes on a cookie sheet in oven OR GRILL 15 to 20 minutes in covered grill.

I make traditional British stiff upper lip Roasties on a regular basis. Yummy.
Peel and cut up your tatties (Maris Piper or King Edward are always good) Par Boil them for 8 minute EXACTLY Heat your oil until its SMOKING HOT Put your par boiled potatoes into the oil Smoosh them around so they are coated in the hot oil Put into Oven on a hot temp until your tatties looks crispy and lovely.
EAT with lovely roast beef, yorkshire puds, cauliflower cheese, sprouts and to finish for pudding...yummy! Sticky Toffee Pudding!!!

I spray a pan with Olive Oil Pam, put the cut up potatoes in the pan. Sprinkle with either salt/pepper/rosemary OR powdered ranch dressing mix.
Cover pan with Foil.
Bake on 450 for 20-25 minutes, take out, remove foil, flip potatoes over and bake 15-20 mins without foil.
The high temp along with the foil/no foil makes them really nice and brown and crispy rather than steamed and mushy.
(You can also shake the potatoes and EVOO and Spices in a ziploc but I feel like that tends to add more oil to the recipe.)

I don't use a lot of oil, I just cut up some Yukon Gold potatoes, cut up some vidalia onion and add some fresh garlic, toss with a little Olive Oil. I cover a pan with foil and spray it with Pam cooking spray, set the oven to 375 and roast away for about an hour. They get nice and crispy...mmmm
