roasted red peppers... do you peel them
i was taught, a few years ago, how to oven roast red peppers.
this past weekend, i was looking into recipes/techniques for storing roasted red peppers. they're in season right now and really cheap. i thought i would roast a lot and have them for the winter.
every recipe i came across talked about taking the skin off. i was never taught to do that. i've never bothered. i but them in strips, add salt and pepper, drizzle olive oil and put on a cookie sheet. put in the oven at 400*, turning every once in a while, until i like how tender they are.
do i have to peel them? seems like so much trouble. am i not getting rid of fiber and vitamins if i do??
oh, and btw, has anyone ever canned/jarred roasted red peppers?

I peel them. I roast them on open flame and the skin gets black.. so it's useless to me.

It depends on how I am eating them - if the skin is black then I peel them. I try to keep them on, as you said, to retain the fiber and nutrients. If we eat them almost whole - like on top of a burger, I leave on the skin. If you are chopping finely and stirring like in pasta, sometimes the skin separates and it can be stringy so I would remove it.
The jarred versions are great - I like the Trader Joes or victoria brand. I use these alot when the fresh ones are either too pricey or not fresh that day.

i broil them for 20mins turning them every 5-10, then i place them in a large ziplock until they are room temp, take them out, peel and cut them. the skin comes off very easily, and then marinate them in whatever you want. good luck

I put them in the oven whole and just cook them until the skin starts turning black. Turning every once in a while. Then I take them out and peel them- skin comes off pretty easily. I also remove the seeds.
I've canned or jarred them, but my mom and I freeze them after they are roasted. Just put them in a freezer safe container or ziplock.
When you want to use them, take them out the night before, put them in the fridge. Then I just prepare them.
I prepare them as a side dish- cut into strips once they are cleaned of seeds and skin, add fresh garlic and celery, salt & olive oil. DELICIOUS!

I do them on the BBQ and then put them into a plastic bag to let them steam. Once they steam, the skins pretty much fall off right away.
I don't understand how you can eat the skins, they are so papery and gross!
