Have you tried stuffing it with lemons and limes? It gives it a really nice citus flavor that isn't overwhelming. I also put rosemary under the skin when I roast with lemons and limes.

I just do the rosemary under the skin & inside with a few cloves of garlic, salt & pepper.
I'm not very good with cooking so even this is a stretch for me.
If you find anything good, please post I can use all of the help I can get.

We stuff a lemon inside, then use the lawry's lemon pepper marinade..it is soooooooo good!!!

When I am roasting chicken, I am a big fan of paprika.

I stuff it with a quatered lemon, onion, green pepper and 2-3 cloves of garlic. I also take a bunch of sage, thyme, rosemary and stick in the cavity also. Don't forget to season the inside of the chicken also..... I use McCormick's Poultry Rub for the inside and the outside of the chicken.
