we're trying to budget our sitter to come regularly (maybe a couple of hours a few days a week) so that I can have help.
Do I pay her hourly or do you do a flat rate that averages out to a little less than the hourly rate?

I have friends who have a mother's helper. I think that's what you are looking for right?
They have a weekly, part-time, (somewhat flexible) schedule and pay her hourly.
ETA: Most days she has her scheduled for late afternoon/early evening... for the "dinner, bath, bedlam" hours as she calls it.

We have a "nanny" which really is just a sitter that gets benefits. I pay her by the hour but she gets paid for a minimum number of hours a week.

My friend had a mother's helper when her twins were born (with the twins she became a 3under3 mom) and I think she was paying her $10 an hour.
She only did it for 6 months because it became very expensive fast and the woman came 3 days a week and did what ever my friend needed her to do.
