Salad ideas
I need salad ideas that don't involve lettuce.
can you share your filling but unleafy salads?

what about a 3 bean salad?
a can of red beans a can of chick peas a can of white bean
cut up some red onion pour some italian dressing over and let sit in the refrigerator to marinate
you can add other veggies if you want.

I've made this before and it always comes out good but you have to eyeball the olive oil, 2/3 cup is way too much.
Chickpea (Garbanzo Bean) and Tomato Salad Recipe
2 15-ounce cans of garbanzo beans (chickpeas), drained and rinsed 4 tomatoes (about 2 lbs.), cored and chopped 4 large hard-boiled eggs, peeled and chopped 2 cups of chopped sweet onion (Vidalia, Walla walla, or another variety) 2/3 cup extra-virgin olive oil 6 Tbsp of white wine vinegar or sherry vinegar 1 teaspoon salt Freshly ground pepper Chopped parsley for garnish Method
1 Combine the garbanzo beans, tomatoes, eggs, and onion in a large bowl.
2 Separately mix the dressing ingredients in a jar or a small bowl - olive oil, vinegar, salt, and pepper. Pour over salad ingredients. Sprinkle on chopped parsley. Serve immediately.
You can chill the undressed salad up to six hours, until ready to serve.
Serves 6-8.

great salads..sound yummy.
what about salads that don't have the beans? Looking for low calorie..I guess something to replace the bulk that the lettuce supplies as well as keeping it low calorie.

I always like a tomato, cucumber and red onion salad! you can just dress it with oil and vinegar or italian dressing

sliced cucumbers with dil, sliced red onion, red wine vinegar and oil and slat and pepper
or
diced cucumbers diced green pepper diced tomatoes chopped red onion feta cheese chopped parsley olive oil and red wine vinegar salt and pepper

I love cucumber, olives, grape tomatoes, feta, salt and oregano. I drizzle it with a balsamic vinaigrette.

we do a baby spinach salad w/ pine nuts and raspberries in a dressing w/ balsamic vinagrette in it, but I can't think of the other ingredient to mix w/ the balsamic. FM me if you want it and I'll find it out for you. We don't measure ingredients- just eyeball it but we had to make it twice yesterday b/c everyone (except me -lol) ate it... it's always a big hit.

Spiced Marinated Tomatoes
Ingredients
4 cups halved red, yellow, or orange cherry tomatoes 1/3 cup thinly sliced green onions (about 4) 4 garlic cloves, minced 1 jalapeño pepper, thinly sliced 1/3 cup white balsamic vinegar 1 tablespoon light brown sugar 1 tablespoon extravirgin olive oil 2 teaspoons minced peeled fresh ginger 1 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper
Preparation
Combine first 4 ingredients in a large bowl. Combine vinegar and remaining ingredients in a small bowl; stir until blended. Pour vinegar mixture over tomato mixture, tossing to coat. Chill 1 hour.

i make a greek pasta salad that is so yummy!
1/2 cup olive oil 1/2 cup red wine vinegar 1 1/2 teaspoons garlic powder 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried oregano 3/4 teaspoon ground black pepper 3/4 teaspoon white sugar 2 1/2 cups cooked elbow macaroni 3 cups fresh sliced mushrooms 15 cherry tomatoes, halved 1 cup sliced red bell peppers 3/4 cup crumbled feta cheese 1/2 cup chopped green onions 1 (4 ounce) can whole black olives 3/4 cup sliced pepperoni sausage, cut into strips
In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight.

I like Tomato Mint salad - which is exactly what it sounds like. Tomatoes, chopped red onion, fresh mint, lemon juice, olive oil and salt/pepper to taste. It's a great summer salad.
We also like avocado salsa - avocados, onion, a few diced tomatoes, cilantro, garlic, a bit of cumin, salt, pepper and lime juice. Yum.
Another favorite is bean salad. I do 3-4 kinds of bean, olive oil, lemon juice, salt pepper and fresh dill.
For a change we do a grain salad - barley or quinoa mixed with brown rice and then tossed with tomatoes, radishes, olive oil, red wine vinegar, garlic, salt and pepper.
ETA: I find that non-leafy salads are better when they get to sit and marinate a little before eating!

probably not what you had in mind, but I recently tasted this red potato salad and YUMMMM-O!
after boiling, let potatoes cool completely add mayo a little mustard red onion celery S&P
SO SO SO GOOD!

i sometimes throw together cucumbers peppers and tomatoes and then just mixed it up with seasoning and vinagarette
also another popular one is tomatoes, cliantro, corn and chickpeas with olive oil
