Serving Fillet Mignon for Xmas Day & need side suggesstions please!!!
Besides appetizers, lasagna, and meat in the sauce (braccole, sausage, meatballs) we are having fillet mignon. I could really use some side dish ideas. Please help...was thinking i could do some basics like roasted asparagus, or string beans in olive oil, but wanted something with alittle more WOW factor. any suggesstions, recipes appreciated.

I do a fantastic cheddar and onion pudding, it was absolutely made to be eaten with beef! The principle is that its a bit like Yorkshire pudding but not quite. Really worth making. I am going to make one with my rib of beef on Christmas day.
I know the recipe is metric, but if you can cook using a scale, this is a really easy recipe.
Mature cheese and onion pudding A versatile dish for vegetarians and carnivores alike from Brian Turner. Serve it with bangers and beans for a bit of comfort food or try it with cauliflower Mexicana for a spicy vegetarian dinner. You can even serve it as a fancy accompaniment to roast beef.
MATURE CHEDDAR AND ONION PUDDING Serves 4 INGREDIENTS: 2 medium onions 1 tbsp olive oil salt and pepper 2 oz (50g) butter 1 clove garlic, crushed 3 medium eggs 14 fl.oz (400ml) tepid milk 3 oz (85g) plain flour 5 oz ( 140g) extra-mature cheddar cheese 1 tsp chopped rosemary
METHOD: Preheat the oven to 220C/425F/GMk 7. Peel the onions and cut each one through the root into 8 wedges. Heat the oil in a pan, add the onions and season with salt and pepper. Cook gently for about 5 minutes. Add the garlic and half of the butter and continue to cook, slowly, until the onions are soft. Remove from the heat and set aside. Grease a shallow 11 x 9 ½ inch (30 x 25cm) ovenproof dish with the remaining butter. Put the flour into a mixing bowl and add the eggs. Beat well then whisk in the milk to make a smooth batter. Season to taste. Grate half the cheese and add to the batter along with half of the rosemary. Place the onions in the greased dish and pour the batter over them. Thinly slice the remaining cheese and place on top. Sprinkle with the remaining rosemary. Bake in the oven for 20-25 minutes until puffed up and golden. Serve immediately.

au gratin potatoes... i use a recipe from the food network i think its bobby flays. they always get a BIG WOW! when i make them for people!!!
garlic mashed potatoes twice baked potatoes
I defintiely think roasted asapargus!
