Roasted Sweet Potato and Apple Soup
From: Real Simple Mag - October '08

Ingredients:

3 pounds sweet potatoes
1 tablespoon olive oil
1 onion, chopped
1 celery stalk, sliced
1 Granny Smith apple, peeled and thinly sliced
kosher salt and black pepper
6 cups water
2 teaspoons salt
1/2 teaspoon pepper

Directions:

Heat oven to 400 degrees. Prick the potatoes with fork, place on baking sheet, and roast until tender (40 to 45 minutes).

Meanwhile, heat oil in large saucepan over medium-high heat. Add onion, celery and apple. Cook, stirring occasionally, until soft (10 to 12 minutes).

Halve the potatoes, scoop out the flesh and add to saucepan. Add water, salt and pepper. Cook until heated through (8 to 10 minutes).

Puree the soup in saucepan using handheld immersion blender. Add water, if necessary, to reach desired consistency.

Serve with slice of sourdough or favorite rustic bread, with butter. Bon appetit!

The Best Pumpkin Muffins EVER!

1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1/8 tsp ginger
1 tsp salt
2 eggs
1 stick butter, softened
2 tsp vanilla
1 cup sugar
1/4 cup brown sugar
1 16oz can pumpkin
3/4 cup nuts, chopped (optional)

Combine flour, baking powder, baking soda, spiced and salt.

In another bowl, beat together eggs, butter, vanilla, and sugars until fluffy. Mix in pumpkin and nuts. Gradually add dry ingerdients to creamed mixture. Spoon batter into lightly greased muffin cups. Bake for 15-22 minutes at 400 degrees or until a toothpick in the center comes out clean. Yields 24 muffins.


(I find that I like a little more spice in my muffins, so I taste it and I adjust it.)

Chai-Spiced Bread

3/4 cup sugar
1/2 cup butter, softened
1/2 cup prepared tea or water
1/3 cup milk
2 tsp vanilla
2 eggs
2 cups flour
2 tsp baking powder
3/4 tsp ground cardamon
1/2 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground cloves


Glaze

1 cup powdered sugar
1/4 tsp vanilla
3-5 tsps milk
additional cinnamon


Heat oven to 400 degrees. Grease bottom of 8x4 or 9x5- inch loaf pan with shortening or cooking spray.

In a large bowl, beat sugar and butter with an electric mixer on medium speed until fluffy. On low speed, beat in tea, 1/3 cup of milk, 2 tsp vanilla and eggs until ingredients are well combined (will appear curdled). Stir in remaining bread ingredients just until moistened. spread in pan.

Bake 50 to 60 minutes or until toothpick inserted into the center comes out clean (do not underbake). Cool in pan on cooling rack for 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. COol 30 minutes.

In a small bowl, stir powdered sugar, 1/4 tsp vanilla and 3 tsp of the milk, adding more milk by teaspoonfuls, until spreadable. Spread glaze over bread. sprinkle with additional cinnamon. COol completely, about 2 hours before slicing. Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10.
