silly cupcake question
Sorry for the silly question...
I made milk free/egg free mini cupcakes for DD's daycare party tomorrow. They, surprisingly, are not bad.
Anyway, it's been a really really long time since I baked. I put them in a tin with a plastic cover. Do I need to refrigerate them?

Well I cheated and used a cake mix from Mrs. Greens market. All natural, organic, peanut, dairy and egg free.
BUT Lee was nice enough to email one this morning that I can forward you!!!

There's a mix made by Cherrybrook Kitchen that is Dairy/Egg/Nut free that is surprisingly good. You can get it at some health food stores.

That's exactly the one I used!!! It's a little drier, but even my DH liked it.

The Cherrybrook kitchen mixes are also really good! If you have extra, you can freeze the frosted cupcakes and just pull one out when you need one - I do it for Ryan all the time. His preschool even has like 6 of them frozen there in case something comes up that I didn't know about!
