Skinnytaste Cookbook
Who has one? I bought it and I have already made a bunch of stuff. I'd love to hear everyone's hits and misses.
I've made: Greek Salad Pita Pizzas--Love! My lunches were getting boring so this came at the perfect time. I pack it in desperate containers and assemble at work.
Loaded Nacho Potato skins--I don't make this as is. Basically I made the potato skins and her kid friendly chili from the website and served together. Very good and my dd loved it!
Buttermilk Oven Fried Chicken--a tad salty but still really good and chicken was so moist. Will def make again.
So-addicted chicken enchiladas-- I didn't make them from cookbook but they are on her blog and they are great!
Mongolian Beef Broccoli--very good
Cheesy Cauliflower Mash--soooo good! I could've eaten it all!
Confetti Slaw--it was fine. I would make it as an extra light side for a BBQ but was just ok for our dinner side dish...too much went to waste.

Gina Homolka. She's the author of the Skinnytaste blog/website. A lot of people on here make her recipes. The recipes are lightened up and still really good.

I bought it and have made a few things so far.
Mini Western Omelets - these were very good
Guiltless Choc Chip Pancakes - surprisingly good as well, even DH agreed
BLT Salad - I made this in a mason jar and I really enjoyed it, although I added a little bit of dijon mustard to the dressing
Fettucini Alfredo - eh. I didn't love it, but I'll try it one more time.
Baked Flounder - this was very tasty, as well as quick and easy
I'm doing the chicken cordon bleu meatballs later this week, and I'm excited about those

I just ordered it! I've made lots of the recipes from her site and I was contemplating buying the cookbook..you ladies just sold me!

Oooh I want to make the mini omelettes...now I have to! I'll try the blt salad too! We make her whole wheat pancakes from the blog and add choc chips...the kids love them and there is barely any sugar. We will have to try these too!

I love to cook and usually ask for a few cookbooks for Christmas. I think I will add this to my list, along with "Make it Ahead" from Ina Garten (Barefoot Contessa).
The Skinnytaste recipes are great for everyday meals, and BC is great for entertaining.
Question - What percentage of the recipes in the Skinnytaste cookbook are new (not repeats from the blog)? I think I heard they are almost all new, but wanted to confirm!

She says that out of the 150 recipes in the book 125 are new. I haven't checked, and I don't know if she modified some from the website and calls them new, but for sure a majority are definitely new.
