so I made 2 gluten free desserts and they both 'fell'
one was a black bean chocolate cake. At first, I made it with baking soda (that's what my friend wrote in her recipe). I made it as cupcakes. Within minutes, they all sank! Caved! Sinkhole!
I remade it (after finding it was supposed to be baking POWDER) and although not as drastic, the cake still was not full and rounded.
I then made gluten free pumpkin muffins...those caved a bit too.
For you gluten free bakers, what gives???

I have never had a problem with cakes falling. What flours/flour blend did you use?

I find gluten free things are def not fluffy like regular baked goods.
