Someone help me with what to stuff chicken breasts with, and some recipes so it is not tasteless
I got some thick boneless chicken breasts on sale this week. Can someone give me some ideas to what to stuff it with, or do with? I am thinking of making them tonight- originally thinking of making spinach and mozzarella inside and breading with breadcrumbs- maybe baking or frying it, not sure, would like some other ideas... also how do I keep it closed or should I just make a pocket? thanks!

butterfly it, stuff it and close it with toothpicks! If they are thin you can roll them instead!
spinach and mozz is perfect, I might add some parm and a slice of proscuitto or ham would add a ton of flavor!!!!

Spinach & mozzarella is perfect
Also:
- Spinach, Mozzarella and sauteed mushrooms - sauteed Asaparagus & Brie - mushrooms, onions and bread crumbs - virginia ham & swiss - bacon (pork or turkey) & cheddar - salsa, refried beans & shredded mexican cheese - season outside with taco seasoning. - Stove Top Stuffing (can add any number of things to the stuffing.... onion, carrot, veggies, apples, crasins, etc) - sundried tomato, mozzarella, proccuito
So many combo's - it's endless

Should I season it on the outside or bread it? Do I bake it or fry it? Should I just add seasonings on top and add some broth to the bottom of the pan ? Sorry to sound clueless !

any of the above
For the ham & swiss or bacon and cheddar I would bread the chicken first then roll it up. (ps: cook the bacon first!) ... Bake it at 350 for 40 or so minutes
For the salsa one, I would just lightly sprinkle taco seasoning and bake as above
For the stuffing one, I wouldn't bread - just season with salt, pepper, onion powder and poultry seasoning (or thyme) on top
I usually just bake them ... I find with frying you can burn the outside and have a raw inside ... or you can fry lightly then bake (but that is an extra step and who wants that?! LOL)

Frozen chopped spinach, feta, garlic and mayo. Make it like a paste, put it inside and roll it up. Fry in a pan with some EVOO or bake in the oven. YUM!

Use honey, mayo, and ground mustard to make your own honey mustard sauce. Dip the chicken into that mixture and roll it around. In another bowl, combine breadcrumbs and sesame seeds. After putting the pieces into the mayo mixture, roll them in the breadcrumbs/sesame seeds. I believe I baked them at 400 degrees for 20-30 minutes.
