Spinoff to a La Vodka.. a healthy version?
how can i make a healthy version of a la vodka sauce? there's no way i'm cooking with heavy cream and a whole stick of butter!

You can use I can't believe it's not butter instead of the real stuff and I don't know if it would work but I know they make a fat free half & half. Maybe substitute that for the heavy cream?

I never use butter in my recipe, only a little olive oil to sautee the onions. Then I sub 1/2-2/3 of the heavy cream with FF evaporated milk (or you could try FF half and half). It's definitely not the same but it's a nice healthier subsitute.

these are one of the things that just arent worth making if you dont do it w/the stuff the recipe calls for, bc it'll taste horrible. Just make something healthy then!

Even if I make it w/ the heavy cream I never use all of that butter ! Just some olive oil to sautee the onion .... I use FF 1/2 and 1/2 - not AS good as the original full fat version (But what is ??) and it's not at all horrible - My DH will eat it and he won't eat ANYTHING if he knows it's low fat ........-
