Spinoff to meatballs - any good sauce recipes?

I went food shopping and couldn't remember which tomatoes were the best so I got (2) 28 oz cans of San Marzano diced and (2) 28 oz cans of Tuttorosso crushed (sp?) and ten (I don't know why I bought 10 Chat Icon) cans of Contandina tomato paste.

I have a stocked spice rack, onions, and garlic.

Anyone have a recipe using what I have on hand?

I have no ground meat, but I do have sweet italian sausage.

I don't have an exact recipe (I go by flavor and keep adding as needed), but here's what I put in my sauce:

2-3 cans crushed tomatos
2 cans tomato sauce
1 can tomato paste
sugar
onion (sometimes I'll put a whole one in as well as one chopped and then take the whole one out when it's done)
garlic (chopped)
italian seasoning
garlic powder
garlic salt
black pepper
crushed red pepper
meatballs
sausage
parmesan cheese (sometimes, not always)

Some people use red wine or carrots (carrots instead of sugar).

2 large cans of tomato puree
1 can tomato paste
pork spare ribs
sausages
meatballs if you really want to go all out.


Season and brown the meat in a separate pan.

In the sauce pot sautee a small chopped onion and garlic in some EVOO till the onions run clear. Throw some fresh basil in there too.

Throw in both cans of the puree and the paste. Also, fill up each can of each puree with water and give it a little swish to get out all the sauce and dump that in too.

Let the sauce come to a boil, then throw in the meat, lower the heat, season with some pepper/garlic powder/oregano give it a good stir and leave the cover partly on.

Stir it every now and again and cook for a good 3 hours.

*I don't put sugar in the sauce unless there is too much of an acidly taste.

2 cans Tuttoroso crushed tomatoes
1 can tomato paste
1 can water
Onion
Garlic
Sugar
Salt
Crushed red pepper flakes
Fresh parsley chopped
Fresh Basil Leaves
1 stick of pepperoni
Grated parmesan/locatelli cheese

Saute garlic & onion in olive oil. Add remaining ingredients. Cut pepperoni in 1/2. Cook for several hours on a low flame. Stirring often.

I don't have specific measurements because I've been making it forever.

I also add my meatballs to the sauce after baking them in the oven.

2 cans Cento crushed tomatoes
1 can Cento Plum tomatoes
One large sweet onion
3 cloves chopped garlic
Olive oil
coarse salt
coarse pepper
oregano
parsley
basil
romano cheese


Sautee the chopped onion in a large pot with EVOO..once translucent, add the chopped garlic and sautee until fragrant. Add salt and pepper and mix.

Crush each tomato in the can of the plum tomatoes by hand at the inside of the rim of the pot so there's no mess..inside but not all the way down so you don't burn your hand. Add the rest of the juice.

Add both cans of crushed tomatoes..add 1 1/2 can of water.

Mix well, cover and bring to a low boil.

Add oregano, parsley, a little pinch of basil. Simmer for about an hour with the cover askew.

Taste the sauce and adjust spices. I usually add more salt and pepper at this point.

Simmer on med low for an additional 30 minutes. During the last 20 minutes of cooking I add 1/2 cup of grated romano cheese.

If you make meatballs with it I would cook the meatballs in the sauce but I fry them partially before. Seasonings change with this usually and you would need more than if it was just a marinara.

I grate my onions, i don liek the long string or chopped onion like , in my sauce. So grate the onion , fry up with evvo ..
add sliced very thin garlic . I use alot , but I love garlic, the more the better

let the 2 combine but not brown
I then add the spare ribs & brown them on all sides. once they are seared I add the cans of crushed .. then I add one can of whole & just squeze the whole ones in the pot.

a lil s& p , some basil . cover & simmer for a few hours..

after its done you can remove the spare ribs & the meat falls off the bone . its so good..
