Spinoff to Sauce: How do you make yours?
I've tried it a few times, and it almost always comes out to watery, or too bland. So i stick to jarred. But I'd love to hear some ideas on making my own.
How do you make yours?

depends on my mood, i make a few basic types
fresh raw sauce: cut up a whole bunch of tomatoes (whichever has a good price, but not grape or cherry), grated/minced garlic, maybe some minced shallot, fresh herbs (i use basil, chives, oregano and a little mint, but just basil would be fine), olive oil, s&p, splash of balsamic and a splash of red wine vinegar. maybe some lemon zest. toss everything together and let it sit for a while, the juices from the tomatoes will come out as well.
roasted sauce: cut up tomatoes (any type works). put on a sheet tray with garlic, s&p, olive oil, balsamic, shallots, and roast the heck out of it. puree and put in a pan on the stove. add red wine, maybe some tomato paste, herbs.
sauce from canned tomatoes: brown garlic and onions. add in some tomato paste and saute it around for a few minutes. add in canned crushed tomatoes and canned diced tomatoes (I usually use one can of each). maybe add some sugar, depending on how tart the tomatoes are. cook it for a while to get the canned taste out. finish it with some herbs and olive oil. this is just my basic recipe that i will change up depending what flavors i want.

when i did try it, it was the last version you wrote about. but it's definitely the first one that's got me inspired.

Saute garlic, olive oil, onions or shallots until transparent. Add mushrooms and sautee further. Then add crushed tomatoes and 1/2 cup of water. ( it's really important to get high-quality tomatoes). Allow the mixture to simmer for 25-30. About 5 minutes before the sauce is done add desired herbs ( I like fresh basil, parsley, salt pepper, oregano). If you add them sooner you risk making their taste bitter. Also, you can add a teaspoon of sugar to balance the acidity of the tomatoes.

when i did try it, it was the last version you wrote about. but it's definitely the first one that's got me inspired.
i hope you enjoy it!! it's good tossed with some fresh mozz too.
i'll also make a roasted grape tomato (with balsamic, evoo, garlic, shallot) but not puree it. i just toss it with pasta, a ton of fresh basil, and mozz (smoked, if i can find it). it's SO good.

this i've done, and it is divine. but i haven't tried it with cheese. great idea.

Super easy. I sauté onions in EVOO until transparent. Add Pomi strained tomatoes. I use 5 of those cartons so I freeze a bunch of sauce. After add the tomatoes, I add whole garlic pieces (which I take out after), salt, pepper and a little sugar. After a bit, I add bay leaf and basil. then I add my meat. Whatever meat I have because it gives the sauce great flavor. Sometimes meatballs, sometimes veal chop and then cook for 40 mins. I love that I have extra sauce!

my mouth is watering, and i think i'm getting preemptive heartburn ;) (i get that from garlic) but, wow, that sounds super easy and delicious.

I do this too. I dont usually put sugar in though. I use an immersian blender to get it to the consistency I like and then I simmer it for a few hours.
