I got it from my new Food and Wine cookbook....

To make a steamer (this is genius!) ball up 3 pieces of foil and place in a large deep skillet and fill with 1 inch of water, bring to a boil.

In a buttered glass pie plate add the sea bass fillets and top with S&P 1 pat of buter and 1 slice of lemon.

Place pie plate on top of foil balls, cover and steam for 10 min or so.....

Done!!!! Better than breaking out the bamboo steamer!
My recipe called for a bread crumb/anchovy/caper topping.....fantastic, lemme know if you want that too, it was so easy!
