Coconut-Cranberry Macaroon
Recipe Summary
Difficulty: Easy
Prep Time: 5 minutes
Inactive Prep Time: 30 minutes
Cook Time: 20 minutes
Yield: about 24 cookies
Ingredients
2/3 cup sugar
2 large egg whites, lightly beaten
1/2 cup dried cranberries, finely chopped
Finely grated zest of 1 orange
2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
3 cups (about 8 ounces) finely shredded unsweetened coconut
Instructions
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment.
Whisk the sugar, egg whites, cranberry, orange zest, vanilla and salt in a large bowl. Toss the coconut with the egg mixture until completely coated.
Moisten your fingertips with water. Form about 1 heaping tablespoon of the batter into pointed mounds or pyramids on the prepared pans, spacing them about 1-inch apart.
Bake until the edges are golden brown and the entire macaroon is nicely toasted and dry, 16 to 20 minutes. Transfer to a rack to cool. Serve.
Store macaroons in a tightly sealed container for up to a week.
***It's nearly impossible to find unsweetened coconut, so I used the sweetened version and I added mini chocolate chips

Thank you so much!!! We had a blast and it was so nice to FINALLY meet some of you 
I was a huge scatter brain when I was leaving and almost left my camera ( ) but I did forget my nursing cover and Dylan's gift (bad mommy!!). If anyone managed to pick up those items let me know!

DS and I had a great time! Renee, thanks so much for organizing!!!! We had to run out to make it to DS's swim class... we were late with all the traffic, but thankfully they started late!
I left my spatula (calphalon black with grey handle) - please let me know if anyone saw it. I'm a weirdo, but I like my matching set

OMG I love that first pic of Lucas!! Dylan was adorable, I'm so glad he had a man crush on Lucas and thought he was the funniest thing! (His laugh was amazing!)

Thanks for organizing Renee!! We had a great time! It was nice catching up with everyone, and meeting some new moms too! I can't believe how much food we had! Loved the cupcakes and the gift bags

We had a great time also! This was Loey's first time at Gymboree and he had a BLAST! The look on his face when he was under the parachute was PRICELESS! I loved meeting all of the mommies!
I haven't been to too many GTGs and it's so fun to put faces with names.
FM me so we can be friends on FB if we're not already!
Can't wait to see the pics Renee and her DH took!
THANKS RENEE for organizing! Thanks babies for all being SO much fun! And thanks mommies for all of the delicious treats!!!!

Hey Ladies!!!
I am glad everyone had a fun time!!
We had such a blast! We totally have to do it again (if they will ever let us back again ahha lol)
I just want to put it out there that I had no part in the favor bags, I don't want to take the credit. That is the wonderful Gerty, she is the one who put together all the gift bags, she is trying to start a favor business so FM her if you are interested!
Can't wait to see you guys again!
ETA... I will post pics tomorrow!!

Thank you so much Renee for organizing!!! DD and I had such a good time. She loved Mrs. Kristina and laughed throughout the whole "touch your head, knees, and toes!" which was just the amazing to see! The food was amazing (LOVED THE MACAROONS and will be attempting those for thanskgiving) and meeting all the mommies and babies. Thank you again!!
