Thanksgiving Stuffing Recipes

I'm looking for a new stuffing recipe. Anyone care to share theirs?

I make mine using the Pepperidge Farms bread cubes (I like the herb seasoned ones) with sausage, onion, sage and mushrooms. Let me know if you want the recipe (I just spent 15 mins. typing it only to be timed out on LIF Chat Icon .

i use two bags of pepperidge farms herbed stuffing
2 packages of preemio sweet (the skinny one) sausage taken out of the casing and cooked breaking the sausage up with a wooden spoon while cooking.
a stalk of celery chopped.
1 to 1 1/2 onion diced and chopped
2 cans chicken broth

Bring broth to a boil or slightly under
pour bags of stuffing into a very large mixing bowl

sautee onion and celery in a large saucepan with about 1/2 stick melted butter till sortened
add broth to the stuffing, mixing as you go so that the stuffing is moist but not watery. pour a little broth and mix stuffing if it's too dry add more broth, dont add broth all at once
once stuffing mixture is mixed add the cooked sausage to the mixture and the cooked chopped celery and cooked chopped onion
I then add handfuls at a time to my bird a handful and a pat of butter, a handful and a pat of butter. loosely till the bird is stuffed
the remaining stuffing mixture i put in a cassarole dish and put a few pats of butter on top and i cover and bake for about 40 mins on 350 YUM!

Very easy & now everyone can get the crunchy piece.

Stuffing Muffins - makes 8- 10

1 package of hamburger potato rolls
1 small onion - chopped
1 stick of butter
2 eggs
splash of milk
salt & pepper

Preheat oven to 350. Grate the rolls on the large holls of a cheese grater. Sautee onion in butter untill soft. Beat eggs with a splash of milk. I add the salt & pepper to the eggs. Add eggs & onions to the bread. Stir. Using an ice cream scoop, scoop a large helping of the mixture into the muffin tin. My tin is non-stick so I didn't need to grease or use Pam. Cook for 30 - 35 minutes.

Make sure you watch them at the end. They go from done to burnt very quick.

I like my stuffing plain but I'm sure you can add you favorites to change it up.

Rachael ray has a recipe for muffins too. I did them 2 years ago and they were a hit!

My grandma makes one from her town in Italy. It's made with cheese (mozzerella and parmesan) and prosciutto and day old Italian and like a dozen eggs!! It's probably so unhealthy but it's the best thing ever!!!
