Weight Watchers Buffalo Chicken Strip Recipe
Ingredients: 8 oz skinless, boneless chicken breast 1/2 cup egg whites or egg alternative 1 cup original Fiber One Cereal 2 tsp salt 1 tbsp garlic powder 1 tbsp onion powder 1 tsp paprika 1/2 tsp black pepper 1 cup and 2 tbsp Frank’s Red Hot Sauce 1 tbsp light butter (I used Balade Light Butter)
Directions: Preheat oven to 400 degrees, and spray a baking sheet with nonstick cooking spray. Wash and cut chicken breasts into strips that are approximately 1 1/2 inches wide. Set aside. In a food processor, combine cereal, salt, garlic powder, onion powder, paprika and pepper and pulverize to a fine powder or breadcrumb like consistency. Pour mixture into a shallow bowl or onto a small plate. Set aside. In a small saucepan, melt butter and then add in 1 cup of the hot sauce. Mix well and warm until heated, but not bubbling or boiling. Pour into a small, shallow bowl, and set aside. In a small bow, mix egg whites (or egg alternative) with the 2 tbsp or remaining hot sauce. Now take each chicken strip, and coat with egg and hot sauce mixture. Shake off all excess egg from the meat. Next coat chicken in cereal mix until strip is fully breaded. Lay strip on baking sheet. Repeat until all pieces of chicken are breaded and on the baking sheet. Now, with a brush or spoon, drizzle about 3/4 hot sauce and butter mixture over all the chicken pieces. Make sure to coat well. Bake chicken at 400 degrees until breading becomes crispy and chicken is cooked through (approximately 15-20 minutes). Serve with remaining hot sauce mixture for dipping.
Serves 2 Each serving = 4 Weight Watchers Points

Good morning ladies. I wanted to share with you all this delicious recipe that I made this weekend from the WW site. 5 points per serving, makes 4 servings. ENJOY!!!
Chicken with Broccoli and Garlic Sauce 2 tsp olive oil 1 pound(s) uncooked boneless, skinless chicken breast, cut into 1-inch pieces 1 tsp dried thyme, or 2 tbsp fresh minced thyme, or to taste 1/2 tsp table salt 1/4 tsp black pepper 3 medium garlic clove(s), minced, or more to taste 2 cup(s) broccoli, florets 1 1/2 cup(s) reduced-sodium chicken broth, divided 1 1/2 tbsp cornstarch 2 cup(s) cooked brown rice, kept hot
Instructions: Heat oil in a large skillet over medium-high heat. Place chicken on a plate and season with thyme, salt and pepper. Add garlic to skillet and cook, stirring, 1 minute. Add chicken to skillet and cook until browned on all sides, stirring frequently, about 3 minutes.
Add broccoli to skillet, cover and cook 2 minutes. Add 1 cup of broth, cover and simmer until chicken is cooked through, about 5 minutes.
In a cup, dissolve cornstarch in remaining 1/2 cup of broth; add to skillet. Simmer until mixture thickens, stirring constantly, about 1 minute; serve over rice.
Yields about 1 cup of chicken and broccoli and 1/2 cup of rice per serving.

Honey Pineapple Chicken 1/4 cup(s) low-sodium soy sauce 1 tsp olive oil 1 clove(s) garlic clove(s) 4 slice(s) Dole Canned Pineapple Slices in Juice 2 tbsp honey 16 oz uncooked boneless, skinless chicken breast Instructions
Mix soy sauce, oil, minced garlic and honey. Grill chicken and spoon sauce over each piece. Place 1 slice pineapple on each piece of chicken. Use extra sauce to top on chicken.
I also made a packet of the WW chicken & herb pasta side, and some steamed broccoli. 1 chicken breast, 1/2 the pasta side, and however much broccoli you want....8 points!

I found a really great webiste http://weight-watchers-points-recipes.blogspot.com/ I've tried several recipes and loved them all. Here are two of my favorites.
Crock Pot 3 Bean Turkey Chili Gina's Weight Watcher Recipes Servings: 12 • Serving Size: 10.8 oz • Prep Time: 20 minutes • Points: 3.125 ww points
* 1.3 lb (20 oz) fat free ground turkey breast * 1 small onion, chopped * 1 (28 oz) can diced tomatoes * 1 (16 oz) can tomato sauce * 1 (4.5 oz) can chopped chilies, drained * 1 (15 oz) can chickpeas, undrained * 1 (15.5 oz) can black beans, undrained * 1 (15.5 oz) can small red beans, undrained * 2 tbsp chili powder
Topping:
* 1/2 cup chopped red onion * 1/2 cup chopped fresh cilantro for topping * shredded cheddar to top (extra pts)
Brown turkey and onion in a medium skillet over medium high heat until cooked through. Drain any fat remaining and transfer to crock pot. Add the beans, chilies, chickpeas tomatoes, tomato sauce and chili powder mixing well. Cook on high 6-8 hours. Garnish with onions, cilantro and cheese and enjoy!
------------ Crock Pot Santa Fe Chicken Gina's Weight Watcher Recipes Servings: 8 servings • Size: 9.85 oz • Prep Time: 5 minutes • Points: 4.25 ww points
* 24 oz (1 1/2) lbs chicken breast * 14.4 oz can diced tomatoes with mild green chilies * 15 oz can black beans * 8 oz frozen corn * 1/4 cup chopped fresh cilantro * 14.4 oz can fat free chicken broth * 3 scallions, chopped * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp cumin * 1 tsp cayenne pepper (to taste) * salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (extra pts).

Ingredients 2 serving(s) butter-flavor cooking spray 1 tsp butter 1 small onion(s), chopped 2 cup(s) mushroom(s), sliced 1/4 tsp paprika 1/4 tsp dried thyme, crushed 1/2 tsp table salt, or more to taste 1/4 tsp black pepper 2 cup(s) frozen mixed vegetables 1 cup(s) canned chicken broth 3 cup(s) cooked chicken breast, chopped 2 Tbsp all-purpose flour 1/2 cup(s) fat-free evaporated milk, divided 4 roll(s) reduced-fat crescent roll dough, unrolled
Instructions Preheat oven to 375ºF. Coat a 10-inch round shallow baking dish with cooking spray.
Coat a large pot with cooking spray. Add butter and melt over medium heat. Add onion and mushrooms and cook, until tender, stirring frequently, about 5 minutes. Stir in paprika, thyme, salt and pepper. Add vegetables, broth and chicken. Cover and simmer 15 minutes.
In a small cup, combine flour and 1/4 cup of evaporated milk; stir into chicken mixture. Cook over medium heat until thickened, stirring constantly, about 2 minutes. Stir in remaining 1/4 cup of evaporated milk and cook until mixture is slightly thickened, about 2 to 3 minutes more.
Spoon chicken mixture into prepared baking dish. Unroll crescent rolls and arrange dough around inside edge of baking dish to form a border (there will be a hole in the middle). Bake until rolls are golden brown and filling is bubbly, about 15 minutes. Cut into 6 pieces and serve.

Chicken with Scallion Sauce POINTS: 3
14 oz fat-free chicken broth, reduced-sodium 2 Tbsp all-purpose flour 2 medium garlic clove(s), minced 1/4 tsp dried thyme 1 spray(s) cooking spray 1 pound(s) uncooked boneless, skinless chicken breast, (four 4-oz pieces) 1/3 cup(s) scallion(s), finely chopped, divided 1/8 tsp table salt 1/8 tsp black pepper
Combine 1/4 cup broth and flour in a small bowl, stirring with a whisk until smooth. Add remaining broth, garlic and thyme; set aside.
Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add chicken, and cook 4 to 5 minutes or until lightly browned. Turn chicken; add 2 tablespoons scallions. Pour broth mixture over chicken; sprinkle with salt and pepper. Reduce heat, and simmer, uncovered, 15 to 20 minutes or until chicken is done, basting often.
Remove chicken from pan; keep warm. Bring sauce to a boil over medium-high heat. Scrape bottom and sides of pan, using a rubber spatula. Cook 2 minutes or until sauce is reduced to 3/4 cup. Pour sauce evenly over chicken, and top with remaining scallions. Yield: 4 servings (serving size: 1 chicken breast half).
