I usually just bake it in the oven. Either with breadcrumbs (like chicken cutlets) or with a touch of butter and seasoning. You could grill it also but we haven't tried that yet.

I coat the tilapia in egg whites and then mix parm cheese and Italian breadcrumbs and dip the tilapia into that mixture and cook on the stove (low / med heat) with a little EVOO.
I also bought panko (asian style breadcrumbs) and coat the tilapia with that - I really love the panko but DH prefers the regular breadcrumbs.

I broil it...sit it in some olive oil or veg broth...sprinkle each side with oregano, pepper, salt and top it with a lemon circle.
DH likes to fry it like you would chicken cutlets.

This recipe is my favorite- Macadamia encrusted tilapia with pineapple salsa. It's pretty easy to make and so yummy, although it is a bit spicy:
Ingredients: 2 eggs 1/8 teaspoon cayenne pepper 1 cup of all-purpose flour 1 3/4 cups of macadamia nuts, finely chopped 4 tilapia fillets (6 ounces each) 1 tablespoon butter, melted
Pineapple Salsa: 1 cup of cubed pineapple, fresh or canned 1/4 cup chopped sweet pepper 3 tablespoons thinly sliced green onions 2 tablespoons sugar 1 jalapeno pepper, seeded and chopped 1 tablespoon lime juice 1/2 teaspoon minced fresh gingerroot 2 tablespoons minced fresh cilantro
In a shallow bowl, whisk eggs and cayenne pepper. Place flour and nuts in separate shallow bowls. Coat fish with flour, then dip in egg mixture, and then coat with nuts. Place on a greased baking sheet. Drizzle with butter. Bake at 375 degrees for 15-20 minutes or until fish flakes easily with a fork.
Meanwhile, in a small serving bowl, combine the pineapple, red pepper, green onions, sugar, jalapeno, lime juice and ginger, sprinkle with cilantro. Serve with fish.
Yields 4 servings, 1 1/2 cups of salsa.

I don't see why not, but I'd use another mild flavored fish, maybe flounder? I imagine tuna might be good too. I don't think it would work well with salmon...

Foil packets...
Mix together in a bowl:
Drained canned diced tomatoes Minced Garlic Parsley Olive Oil Sea Salt
Place each 1/2 lb filet on a piece of foil, cover with tomatoe mixture..seal up foil...place on cookie sheet..bake at 400 for about 20 minutes....

INGREDIENTS: 3/4 cup freshly grated Parmesan cheese 2 teaspooons paprika 1 tablespoon chopped flat-leaf parsley 4 tilapia fillets (about 1 pound total) 1 lemon, cut into wedges Extra-virgin olive oil, for drizzling Salt and freshly ground pepper
Preheat the oven to 400º. In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

I just made the chicken franchese recipe from this board but used flounder filets in place of chicken. You could definitely do this with tilapia. It was delicious and easy.

Whatever I have that day! A lot of times sauteed string beans.

Get some fresh string beans (I get the kind that have the ends already cut off=Lazy). I just put a little bit of olive oil in a heated pan, add the beans, (I add a little Italian bread crumbs for texture & flavor -Like a palmful), add S & P to taste. Voila! Simple but Yummy. ...There's a Rachael Ray recipe that includes orange zest thats good too.
ETA: You can steam/boil them a short while before sauteeing if you don't want the string beans too al dente.
