Tip for really good rice.

I learned and read everywhere that you boil water and then add rice.

But I found a tip one day looking for how to make rice like at Chipotle. Wow...what a difference!

I add oil to a pot, add the rice and some salt and stir it around for 2 minutes until the rice is coated. Kind of like making popcorn. THEN I add the water. Bring to a boil and then simmer.

My DH is LOVING rice! Chat Icon

You know whats funny, I always "toast" my rice off that way, ie cook it in some oil first and then add water, and I never really knew why! But its sooooo good that way! I made rice and peas tonight with coconut milk and it was amazing!

yup this is what I do too, and it is THE BEST rice. I add about 2 TBSP of oil and then add pureed garlic and salt. let that simmer about 1-2 mins until the garlic gets golden. then i add the rice, then water and cover it to boil. i cant believe i ever used 'minute rice', when this is sooo good. Well, I saute the rice in oil, add equal amounts of coconut milk, boiling water, a crushed clove of garlic, some veggie stock, and some thyme (using 1 part rice 2 parts water) a tin or two of rinsed kidney beans and cook it like I cook normal rice. Its my favorite thing to eat!!!

another tip....cook rice until almost done - per all your wonderful
variations above - cover pot with alumiumin foil & then pot cover.
turn down heat to finish cooking. Rice comes out shelly each time Chat Icon

I use maybe 2 TBS of oil in the pot. For my rice, I use 1 cup rice to 2.25 cups water.

It's funny cause I never knew that this would be a "tip" since I assumed everyone made rice this way. Chat Icon

This is definitely the way I was brought up to make rice, I never knew that people didn't normally put oil/salt in the water!

I cook rice covered. But the heat is on low/low medium. Any higher and it bubbles over.

My DH is Puerto Rican and for PR style rice and beans, I make it that way (with the oil in the bottom of the pot).

Another tip I learned from my MIL is not to go overboard on the water and if at the end your rice still seems hard after all of your water is absorbed you can sprinkle more water on the top of the rice so it continues cooking / absorbing.

Seems like a simple concept but it never occurred to me to do that so I'd be eating undercooked rice grumbling to myself. LOL!
