Tips on frying fish
For some reason, I'm not that great on frying fish... I can prepare it other ways, but when it comes to frying.. the breading comes off, or the fish starts to fall apart... any suggestions/tips? I'm looking to make either fried flounder or tilapia

Try dredging it in flour, then egg then the breadcrumbs. Also make sure the fish is room temperature and is completely submerged in the oil (painful to see all that oil). The less you touch it the better the chances of the breadcrumbs staying on.

Pat it dry so there is noooo water at all on it.
lightly dredge in flour, dip in egg and then breadcrumb and make sure to shake off excess.
Make sure oil is HOTTTTT (not burning, but make sure it is ready -- stick the back of a wooden spoon in the oil, you should see bubbles) ....
Do not touch too much.
