Tomato Zucchini Salad YUM
Tomato & Zucchini Salad recipe.
For 2 servings
1/2 c diced raw zucchini
1/2 c diced peeled tomato
1/4 c mayonnaise
1 tbsp fresh chives chopped (I didn't think this was anywhere near enough and added about 3 tbsp)
1 tsp prepared mustard
1/2 tsp salt 1/8 tsp pepper
Combine in bowl/refrigerate for 1+ hours.
Stir occasionally and serve on crisp greens.
Oh my goodness! SO YUMMY!
