tortellini pasta salad or couscous tonight?
I can't decide.
I am making panko breaded chicken cutlets. I have a ton of veggies I can throw into either dish.
what would you prefer?
for the tortellini, I have cukes, tomatoes, zucchini, carrots, and olives
for the couscous, I have pine nuts, dried cranberries, scallions, lemon zest.
if I did the couscous, I'd also make asparagus.

When I do couscous I add lemon juice, tomatoes, green peppers and artichoke hearts. Gives it a nice little crunch.
But honestly, I'd like either one!
