UPDATE with recipe!!! Okay, I know this belongs on the food board, but let me have my glory!

I'm going to a girly spa night at my friend's house tomorrow, so I made this for dessert Chat Icon

Here's the recipe:

For the pastry:

3/4 cup soft unsalted butter
1/2 cup sugar
6 large egg yolks
2 1/4 cups all-purpose flour
1 deep 10-inch tart pan

for the custard:

8 large egg yolks
7 tablespoons sugar
2 1/2 cups creme fraiche (recipe below)
zest of 1 orange
summer fruit (strawberries, kiwi, apricots, blueberries, raspberries, etc)

creme fraiche:

1 cup whipping cream
1 tablespoon sour cream
1/4 cup sugar
1 teaspoon vanilla

Mix together and whisk until foamy. I usually make this and the pastry the day before, and then make the custard whichever day I want to serve the tart

To make pastry, cream the butter and sugar, and then add yolks one by one, beating after each addition. Fold in flour gently until dough comes together. Frm into a disc, wrap in plastic wrap, and refridgerate at least 2 hours.

Preheat oven to 375, and put in a baking sheet. Roll out pastery and fit into the tart pan. Bake it blind for 20 mins (line the pastery with foil and fill with dried beans), and then remove the foil and beans and bake for 5 more mins to dry out the pastery.

For the custard, whisk together the yolks and sugar until pale and creay. Warm the creme fraiche in a pan and then add the yolks and sugar. Add the orange zest (I use dried zest). Keep the saucepan on low and stir CONSTANTLY until it becomes thick (takes about 30-40 mins of constant stirring). Pour custard into cooked pastry and top with the fruit. Put the tart back in the over, lightly covered with foil, and cook for 10 mins. Uncover and cook another 5 mins.

You can choose to glaze the fruit to have it preserved longer, but I don't bother.
For the glaze you take 4 tsp blackberry jam and 2 tsp of water and warm it up. Then add to the top of the tart. I tried it once and didn't like how it looked. Maybe with strawberry jam it would look prettier.

Enjoy! It's a lot of work but it's worth it!!

Good thing I took pics, because I just went to put it in the fridge, and the strawberry juice ran a bit Chat Icon But I guess that is bound to happen.

I make something very similar and it is ALWAYS a hit!!!!!!!!
