Vanilla bean cupcakes and a frosting question
Im making these cupcakes and wondering what frosting I should make for it... I hate all the buttercream frostings I've made lately. They're overly sweet. Any suggestions? I was thinking maybe cream cheese or vanilla bean buttercream? Do you think vanilla bean frosting would be overkill?

I just made this frosting yesterday & I dont think it's too sweet at all... Vanilla Buttercream Frosting 1 cup butter , softened 3 cups confectioner's sugar (sifted so no lumps) 1 teaspoon milk (little more for right consistency) (if you have whipping cream, that works nice too) 1 1/2 teaspoon vanilla extract 1/8; teaspoon salt Directions: After butter softens start whipping it with mixer. I leave it mixing until it's evenly fuffy. Then i slowly add sugar and then salt. Beat till blended & fluffy. Depending on how sweet you like it you can always add less or more. I find 3c just right
Add the milk and vanilla and beat for an additional 3 to 5 minutes or until smooth and creamy.

There is actually a vanilla bean frosting recipe that I use with the vanilla bean cupcakes. It tastes like melted Haagen Dazs ice cream. It's absolutely to die for.

I made this one for those same cupcakes (Jill - I was just tooo with that Wilton recipe that called for Crisco and found one of your posts about the above recipe so I used this instead!) - it was delish! I brought a bunch to work and people were raving about them!
ETA: Also subbed extract for the beans since I couldn't find the mofos!

not for this recipe but i found them at super stop n shop. in the baking aisle, not by the mccormicks spices but right across from them, the fancier spices. it's a clear glass jar with a green top. i actually think i paid even more than the $6.99 for 2, you got a deal!

I recently did vanilla bean cupcakes with a strawberry swiss meringue buttercream. The frosting wasn't too sweet at all and tasted like strawberry ice cream. You have to have patience with it, though. I didn't get it right the first time .

I don't blame you. I can't tell DH when I make that frosting because the idea of the Crisco skeeves him, too. But everytime he's eaten it unknowingly, he's loved it!

$6.99 isn't bad for them! I've seen them that price for ONE! Which is bananas! They are so damn expensive, but so worth it!

ETA: It's a lot of vanilla beans, but you can make a nice extract with that. Much cheaper in the long run! I'm making my own bottle of vanilla extract right now.
