Vegan recipes?
DH and are having over his old college roommate and his fiancée this weekend. She doesn't eat met or dairy and he just doesn't eat meat. I'm at a loss for what to make for dinner, since that's not how I typically cook. Anyone have any good recipes or ideas?

Vegan recipes?
What about like a pasta primavera with lots of veggies? You can make a homemade sauce, or just do it with garlic and oil.
Or what about veggie burgers with sweet potato fries and a side pasta salad?
It's so hard to cook 100% vegan which is why I haven't been able to do it lol

If dh makes them he just sprinkles some oil, salt and pepper on them after i clean the gills out and grills them. I also cook them in the toaster, but here's a real recipe:

Why can't they eat buns? If you read the labels, you can find ones without dairy pretty much anywhere. (ETA if you can't find dairy free buns, or don't want to, you could slice the portabellas and serve them over a salad)
Pasta primavera is a great idea.
Roasted veggies over salad with a loaf of crusty bread is great, especially in this weather.
Bean burritos with guacamole, lettuce, salsa, chopped tomatoes.
Vegetable stir fry with rice or noodles and tofu.

sorry just saw your q now. maybe slice them up and serve in a wrap with grilled onion, hummus, salsa etc?

Vegan recipes?
Does she just not eat meat or dairy, or is she actually vegan (i.e. no eggs, too).
I'd say a big pasta primavera with shredded parm on the side would be a good bet, with nice crust garlic bread (use olive oil instead of butter)

Thanks for asking! Unfortunately we had gone to lunch later than expected, so by the time we got to dinner, no one was hungry. I wound up just making some guacamole and they had brought dessert, so we just ate that for dinner! But, I've saved the recipe for the future! Thanks for your suggestions!
