Re: Vegans or anyone else..
I haven't seen anything-- I looked in Whole Foods and my regular supermarket this weekend. I have not checked the organic store near me, which may have-- was just wondering if anyone has found one in their travels.

No idea- but do they make a cottage cheese? If they do, you can probably blend it to a smoother consistency and that might suffice . . .

I've never seen it, but if you check at a local health food store, you may be able to find something.
I also know that there are ricotta/cottage cheese recipes - to make it out of tofu. If you type "cottage cheese soy recipe" or something like that, into google, it will bring up some recipes.

Re: Vegans or anyone else..
here's how you can make your own
Ingredients 16 ounces firm tofu (not silken) 2 tablespoons olive oil 3 heaping tablespoons sesame tahini 1 tablespoon nutritional yeast (co-ops and upscale groceries have it) 1 teaspoon sage 1/2 teaspoon salt Black pepper to taste Mix in food processor until smooth. If it does not smooth out easily, add a very small amount of water and scrape down the sides.
This goes very well in baked manicotti or lasagna

Re: Vegans or anyone else..
and another
1 pound firm or extra-firm “regular” tofu
Eggless mayonnaise as needed (Nasoya ® recommended)
1 Tbsp Italian spice mixture
In medium bowl, mash tofu with fork or potato masher. Add enough eggless mayonnaise to moisten, then stir in spice mixture. Use as a layer in your favorite lasagna, etc

Re: Vegans or anyone else..
thanks for the recipe-- I am not ambitious enough, nor do I have the time to experiment with making my own.... I am sure some company has to make one..

Re: Vegans or anyone else..
Can you substitute cottage cheese for ricotta?
This place makes it, and it's sold primarily in small, health food stores - you'd have to click on "finding nancy's" to find a place close to you that sells it:
Soy Cottage Cheese
Otherwise, is there a Trader Joe's near you? I get most of my soy cheese products there and they usually have a good array of products -but they vary from week to week.
