Vegetarian Easter dinner ideas-EDITED for critique
It will just be DH and I (meat eaters), our little ones and my inlaws for Easter dinner. They are vegetarian. I have no clue what to make. No eggplant. Any ideas? TIA!
OK so here is what I'm thinking:
-stuffed shells or ravioli with marinara sauce
- tossed green salad with butter lettuce, cucumbers, tomatoes, red onion, olives and blush wine vinaigrette dressing
-antipasto platter
-roasted asparagus in balsamic butter
-garlic bread
DESSERT:
-attempting a banana cream pie
-ghiardelli brownies
-fresh berries with homemade whipped cream
Should I add something to the meal? I feel like I need 1 more item
Would love some honest feedback!

I feel like it needs 1 more dish...maybe some kind of mushroom like sauteed Portabello with olive oil and garlic splash of white wine...or stuffed mushrooms.
Do they eat seafood? maybe some shrimp scampi?

Nope, no seafood. And none of us eat mushrooms lol! Not the easiest group to make a meal for. Thanks for the feedback though
I picked up some antipasto stuff as well. Fresh mozz, roasted peppers, chickpea salad, artichoke hearts. Figure I'll make a little platter and put that on the table as well. Also I decided to make asparagus in balsamic butter as a side instead of the gruyere tart. Felt like the menu had too much cheese.
