Vegetarian Meals?
Hi ladies,
My husbands friend and his girlfriend are coming to dinner Thursday and she is a vegetarian, and doesn't eat mushroom either.
Any recipe recommendations anyone can share? She does he dairy products if that helps with any recipes.

Why dont you just do something like ziti, eggplant parm or lasagna with a green salad and garlic bread on the side

in addition to the above, I've made grilled veggie kabobs, a big summer salad (pecans, strawberries, apples, crumbled blue cheese with raspberry vinaigrette), tomato and mozzerella with balsamic, and grilled zucchini boats for my vegetarian friend

I make these easy stuffed peppers all the time.
I prepare white rice (about 1 cup) and add a can of black beans.
I take two yellow peppers (any color will work, but yellow is nice and sweet) and I cut off the tops and hollow them out. I save the tops and mince them. I sautee the pepper w/some onion and add the rice/bean mixture. Then I layer it in the peppers (this will make 4 large peppers) with mexican or cheddar cheese. I bake them until they're soft and the cheese is browned at 350 degrees, about 20 min.
Also, another easy vegetarian dish that I make all the time is a primavera type dish. I take whatever veggies I have - zucchini, cherry tomatoes, peppers - and I saute them with olive oil & a little minced garlic. I toss this over pasta w/either some feta or shredded mozzarella.

Thanks for the ideas...some of these are great and seem super easy
i wanted something other than ziti or eggplant that's what i made the last time they were over,

What about grilled veggie kabobs over quinoa? You can do stuffed mushrooms, fresh guacamole and chips, and veggies and pitta chips with hummus as appetizers.
