Vegetarian Meals

My husband and I are looking into becoming more vegetarian and restricting meat as much as possible but I need some yummy recipes that don't revolve around pasta? Any suggestions or good blogs to follow?

Mushrooms are great.. mushroom and spinach quesadillas or just plain marinated portobello grilled and served with some risotto.

If you are still open to eggs you can do scrambled veg and cheese eggs or omelettes. Quiche and Frittatas are always good too.

Grilled cheese is one of meatless day staples.

Vegetarian chili is actually really good.

Vegetarian Meals That Don't Involve Pasta:

-pepper, onion and mushroom fajitas
-eggplant parm (i eat mine without pasta)
-vegetable pot pies
-quiche (i like broccoli and onion)
-grilled vegetable kabobs
-rice and beans (i serve with guacamole)

i don't follow any blogs, i just check out a bunch of websites for recipe ideas. foodnetwok.com, allrecipes.com, cooks.com, skinnytaste.com, etc....

here are some ideas for you...
spinach quiche
spinach pies
a ton of different soups and chowders-- tomato bisque, potato and corn chowder, french onion soup, cream of brocolli
rice, risotto, fried rice
eggplant parm
stuffed peppers
veggies fajitas, tacos, and quesadillas
vegeterian chili
vegetarian paella
stuffed mushrooms
